BIOGRAPHY
Associate Professor Dr. Cheng Lai Hoong, a Food Science and Technology lecturer at Universiti Sains Malaysia, specializes in food analysis, processing, and product innovation. Her research focuses on sustainable food development, agricultural by-product utilization, and practical food solutions. Besides, she mentors emerging scholars, serves on editorial boards, and collaborates with industry to advance food science.
RESEARCH INTERESTS
My research focuses on utilizing raw materials and by-products to develop high-value, sustainable food products. I aim to enhance product safety, quality, and marketability, particularly for plant-based and fermented foods. My work also explores eco-friendly innovations, like creating value-added products from agricultural waste, addressing challenges such as food waste reduction and process optimization while improving nutritional quality.
